Nectarine, Burrata and Arugula Salad with Pistachio Tarragon Pesto


I recently had a brunch picnic with some friends and it was so much fun! I can't believe I haven't ever had a brunch picnic before but I'll definitely be having them now. I brought a long this salad. Its easy to put together and great for summer when nectarines and peaches are peak season. And it involves burrata so of course its delicious!


Ingredients -

2 medium ripe nectarines - cut into slices

1 large ball burrata

1 cups arugula

1/4 cup chopped pistachios

Pistachio tarragon pesto - recipe follows

Flake salt


Spread the arugula evenly on a serving platter. Arrange the nectarine slices on top of the arugula. Tear the ball of burrata into chunks and distribute evenly in between the nectarine slices. Spoon the pesto over the salad, top with chopped pistachios and a sprinkle of flake salt.


Pistachio tarragon pesto -

1/4 cup tarragon leaves

2 cups basil leaves

1/3 cup roasted pistachios

1 clove garlic - chopped

1/4 tsp kosher salt

1/3 cup olive oil


In a food processor combine the tarragon, basil, pistachios, garlic and salt. Pulse to combine. With the motor running add the olive oil until the pesto comes together into a smooth paste. Adjust salt if necessary.


Serves 4 as a side dish
