Dinner with Friends

About two years ago my husband suggested that I start hosting dinners for our friends where I create recipes and cook the meals and they come and enjoy an evening of good food and great company. He thought it would be a fun way for me to do something that I love, cooking, and also spend time with the people we care about. At first I put him off about the idea, it was too much work and with two little kids I didn't have time for that much planning and work. But he kept mentioning it and then brought it up to our friends, who thought it was an amazing idea, and wanted to be invited. After about a year of me resisting, but keeping it in the back of my mind, I finally gave in and started planning.

I wanted to create a menu of recipes that were mostly seasonal, included some of my favorite foods, and could be served family style. My goal was to have the focus be on a shared meal, enjoying the company of good friends and making memories together. More than the food itself I love bringing people together, talking, laughing and the experience of an evening well spent. Food is just one of the best, and most delicious, ways to do that. Some good wine helps too! Our first menu included the following:

Grilled Salmon Sliders with Fresh Corn Slaw

Bacon Jalapeño Mac and Cheese

Summer Tomato Pie

Peach Caprese

Grilled Flank Steak with Chimichurri

Blackberry Peach Rhubarb Pie

Homemade Vanilla Bean Ice Cream

I've since hosted two more dinners and with each one friendships have been made and strengthened, and we've all gained new shared memories. I am excited for the dinners to come over the years and the time at the table I will be able look back on with nostalgia.
