This salad brings together my favorite summer fruits, blackberries and nectarines, plus my new favorite cheese, burrata. I'd never used burrata before this summer and now I'm obsessed and want to put it on everything!
Ingredients -
1 large ripe nectarine
1/2 cup cherry tomatoes - halved
3 cups baby arugula
1/2 cup roughly chopped basil
1/2 of a large ball of burrata
3 slices cooked bacon- chopped
For the dressing -
1 tsp dijon mustard
1 tsp honey
1 small clove garlic - crushed
2T white balsamic
1/4 cup olive oil
1/2 cup ripe blackberries
salt to taste
Flake salt for finishing - I like Jacobsen's
Mix the arugula and basil together and arrange on a long platter, top with the nectarine slices and tomatoes. Tear the burrata into large chunks and distribute them evenly on the salad. Sprinkle on the chopped bacon.
Whisk together the dijon, honey, garlic, and balsamic. When well combined slowly whisk in the olive oil until the dressing is emulsified. Add blackberries and use a spoon to gently crush them and mix them into the dressing, leaving larger pieces of berry. Pour dressing over the salad, finish with flake salt and serve.
